My name is Elion Archange,I’m 29 years old and I was born in the Congo where I currently reside in the city of Pointe-Noire,in the economic capital. After my primary and secondary education, my sister offered to guide me through culinary arts while I initially wanted to study audiovisuals. I took her advice and in 2004 I registered into a culinary institution. In 2005, I obtained a professional certificate in pastries. I then did internships at the school Restaurant . During this period, I got to know of the head chef of hotel le Relais de Kouilou, who asked me to work with him. I accepted and I started working as a kitchen commis then entremetier,and later obtaining the post of a cook in a Lebanese restaurant ” le cedre”. I learned the basics of Lebanese cuisine and later got a job as a pastry chef at the hotel Guest-House where I was the replacement of a pastry chef for six (6) months. I then met a ”cordon bleu” french chef GUY who had his own restaurant in the city, the sea club and discovered the French gastronomy. I also worked at hotel de Fez, a Moroccan hotel where I had the post of chef de partie and met with Moroccan chefs like chef Ibrahim Tal ,Chief Macasse. Finally, I had the opportunity to work in private homes and in restaurants and as a Chef in catering companies.
My vision as a young chef is to travel and participate in major culinary events to assert African cuisine to the image of chef Honor Toudissa, chef Malonga , and Chef Yvon Mbiavanga who inspire me a lot in their practice of African gastronomy.
